池田 菊苗(いけだ きくなえ、1864年10月8日(元治元年9月8日) - 1936年5月3日)は、戦前日本の化学者。「うま味」の発見者。
特許庁が選定した日本発明家十傑の一人である。「グルタミン酸ナトリウム」の発見。


「うま味」の発見者・池田菊苗かつて人間の味覚は「しょっぱい」「すっぱい」「からい」「にがい」「あまい」の五味に分類されていました。特に、料理の美味しさに直結すると考えられていたのが「しょっぱい」と「あまい」でした。
昔砂糖は貴重品だったこともあり、どんな料理にも砂糖を入れるのが美味しいと考えている人がいるのです。
東大教授である池田菊苗は、この五味のほかに新しい味を発見しました。それが「うま味」なのです。


1864年、薩摩藩士池田春苗の次男として京都で出生する。京都府中学、大学予備門を経て、1880年から大阪衛生試験所で化学を学ぶ。

1889年、帝国大学理科大学化学科(現東京大学理学部化学科)卒業、大学院へ進学する。

1891年、高等師範学校教授となる。

1896年、東京帝国大学理科大学化学科の助教授となる。

1899年より、物理化学研究のためにドイツ・ライプツィヒ大学オストワルド研究室に1年半留学する。

1901年5月から10月までロンドンに滞在。夏目漱石と同じ下宿に住み、以降親交を持つ。帰国後、東京帝国大学教授に昇進。

1902年、理学博士の学位を取得。

1907年、酸甘塩苦の4基本味以外の味成分を「うま味」と名づけ、単離研究に着手。昆布の旨み成分がグルタミン酸ナトリウムであることを発見し、翌1908年にグルタミン酸ナトリウムを主成分とする調味料の製造方法を発明し特許を取得。1909年5月、うまみ調味料「味の素」が鈴木製薬所(現味の素株式会社)から発売された。本人はグルタミン酸を、「具留多味酸」と表記した。

1913年、日本化学会会長。

1917年、理化学研究所の創立に参加(同化学部長)。

1919年、帝国学士院会員に任命される。

1923年、東京帝国大学を退職。

高弟に鰹節のうま味成分であるイノシン酸を発見した小玉新太郎がいる。


夕飯から思いついた「うま味」
菊苗は、ある日の夕飯に出された湯豆腐の美味しさに感銘を受けます。妻の「物産展で買った良い昆布を使った」という言葉から、菊苗は「昆布にはうま味の素があるに違いない」と確信し翌日からうま味の研究を始めたのです。
菊苗は大量の昆布を研究室に持ち込んで昆布だしを取り、昆布だしをさらに煮詰めたり化学薬品を加えてみたりと、様々な手法を試して「うま味の素」の抽出に専念します。そしてついに40kg近い昆布を消費してわずか30gの結晶の析出に成功します。これを菊苗、指でペロリとやってみれば、ウンあの時の湯豆腐の美味しさそのもの。1908年、こうして菊苗は「うま味」物質であるグルタミン酸を発見したのです。グルタミン酸自体は、40年も前に発見されていたのですがどんな働きがあるかまでは突き止められていませんでした。菊苗は、「発明家としてグルタミン酸を発見した」というよりも「研究者としてグルタミン酸を再発見した」のです。
後にグルタミン酸はうま味調味料の主成分として活用され、世界中の食卓に欠かせない存在となっています。


独立行政法人理化学研究所(りかがくけんきゅうしょ)は、1917年(大正6年)に創設された物理学、化学、工学、生物学、医科学など基礎研究から応用研究まで行なう日本で唯一の自然科学の総合研究所。略称「理化学」または「理研」。
鈴木梅太郎、寺田寅彦、中谷宇吉郎、長岡半太郎、嵯峨根遼吉、池田菊苗、本多光太郎、湯川秀樹、朝永振一郎、仁科芳雄、菊池正士など多くの優秀な科学者を輩出した。
